Easy Bruschetta Chicken w/Balsamic Glaze

Make a Balsamic Glaze

This recipe is the perfect time to make an easy balsamic glaze. The balsamic glaze helps to bring together the flavor profiles of the entire dish. While I haven’t perfected my balsamic glaze recipe, I love this Balsamic Glaze Recipe from Add a Pinch.


Easy Bruschetta Chicken w/Balsamic Glaze

Feeds 4 people


Ingredients

  • 2 chicken breasts, sliced into 4 total fillets

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp basil

  • 1 tbsp olive oil

  • Mozzarella cheese, sliced into 8 pieces

  • 2 large tomatoes, diced

  • 1 tbsp minced garlic

  • Balsamic glaze


Directions

  1. Preheat the oven to 400º.

  2. Make the bruschetta. Dice two large tomatoes and toss with olive oil, basil, and minced garlic.

  3. Prep the chicken. Take two chicken breasts and slice them into thin fillets. Apply olive oil to each fillet and then season both sides with onion powder, garlic powder, basil, salt, and pepper.

  4. Heat a cast iron skillet to medium/high heat with 1 tbsp of olive oil.

  5. Add the chicken to the cast iron skillet and cook for 5 minutes on each side. Once nicely golden on either side, add the cast iron skillet to the oven. The chicken will continue cooking in the oven until it reaches 155º.

  6. Remove the chicken. Place two slices of mozzarella cheese on top of each piece of chicken. Return to the oven and cook until the chicken reached 165º.

  7. Remove chicken from oven. Top with the bruschetta, drizzle with balsamic glaze and serve.
